At Good Husband Patisserie, we celebrate this fleeting fruit not just for its vibrant flavor, but for the balance it brings to our creations. This month, we’re paying tribute to cherry season by reimagining a timeless classic with precision, contrast, and heart.

The Short, Sweet Life of a Cherry

Unlike year-round fruits, cherries arrive in a narrow window—usually from mid-May to early July. They are fragile, sun-loving, and deeply seasonal. Their sweetness varies by type, but almost all offer that delicate tang that chefs love to balance richer ingredients. In Japanese culture, cherries (like sakura) symbolize impermanence and beauty—a reminder to savour fleeting moments.

This is why we choose to work with whole Amarena and Californian cherries at their peak—each selected for complexity and colour, each lending natural brightness without relying on artificial flavouring.

Few flavour combinations are as iconic—or as elegant—as cherries and dark chocolate. The rich bitterness of 64% couverture cocoa finds its counterbalance in the fruit’s tart vibrancy. It’s the same reason you’ll find cherry jam on dark toast or a red wine reduction with cocoa-infused sauces—it just works.
